Oodles of Orzo Zucchini Bake (Kid-Approved)

1 cup dried orzo pasta
1 Tbsp. extra virgin olive oil, divided
½ small onion, diced (1/2 cup)
1 medium zucchini, unpeeled and shredded (1 ½ cups)
2 large eggs, beaten
1 cup coarsely chopped cooked chicken
1 cup shredded reduced fat cheese, divided
¼ cup grated Parmesan cheese
¼ tsp kosher salt
¼ tsp black pepper
1 pinch ground nutmeg
