No Bake Pumpkin Oatmeal Energy Bites

Chances are you have most of these ingredients already on hand.  If you don’t have chia seeds, it’s okay to simply leave them out.  Enjoy the taste of fall in every bite!


  • 1 ½ – 2 cups oatmeal (dry,uncooked)
  • ½ cup natural nut butter (Peanut, almond, etc)
  • ½ cup pumpkin puree
  • ¼ cup chia seeds
  • ¼ cup honey
  • 1 tsp vanilla extract
  • ½ tsp cinnamon or pumpkin pie spice
  • ½ cup mini dark chocolate chips (optional, but why not??)


Mix everything together except the chocolate chips.  Once everything is mixed add in the chocolate chips.  Scoop a spoonful into your hand and roll into balls.  Keep in refrigerator for up to a week (if they last that long!) or freezer much longer.
